Sunday Brunch Goodness

Hey everyone!

I have been getting SO into my brunch recently… And I know what you’re thinking - doesn’t a good brunch cost an arm and a leg? And isn’t it impossible to find a yummy healthy brunch spot anyway? Well, in this blog post I’m here to show you that you CAN have a deliciously healthy Sunday brunch in the comfort of your own home. My go-to includes: a serve of my homemade beans, sourdough toast, wilted spinach, sautéed mushrooms and cooked tomatoes (and a cheeky side of pan-fried hash browns if you’re up for it!) Vegan and potentially gluten-free (just swap the sourdough for GF bread), and complete with loads of veggies, vitamins, healthy fats, and protein. Plus, if you make the beans up beforehand and freeze them, you’re good to get this from fridge to table in about 10 minutes.

Homemade ‘baked’ beans

(Serves about 4)

Ingredients

  • 1 onion, diced
  • 1 clove garlic, minced
  • 2 cans tinned tomatoes
  • 5 cans mixed beans
  • 2 tbsp tomato paste
  • 1 tsp coconut sugar
  • 1 tsp sage
  • Salt and pepper to taste

Method

  1. Add onions and water to a frypan on medium heat. Cook until fragrant.
  2. Add in garlic and stir until onion becomes translucent.
  3. Add in other ingredients and simmer for about 15-20 minutes to reduce before serving!
