I hope you’ve all enjoyed some time off over the Christmas and New Year break – I know I certainly have! My days had, up until recently, consisted purely of catch-ups with friends and family, long hot days at the beach and essentially just chilling out and enjoying the beautiful summer weather that we’ve been having in Perth. One of my favourite things that I’ve really been loving this summer is enjoying an ice cold smoothie after a big day at the beach – there’s nothing that quite cools you down like a refreshing (yet filling) smoothie! And so I’ve decided to share my absolute go-to Summer Smoothie recipe with you all – it’s coconutty, it’s fresh, and to me, tastes like summer in a drink!
Summer Smoothie
Ingredients (makes 2)
- ½ frozen banana
- ½ cup frozen raspberries
- ½ cup frozen mango
- ½ cup frozen strawberries
- 2 tbsp passionfruit
- 100mls coconut cream
- 150mls coconut water
Method
Blend all ingredients together and enjoy! Note: Fresh fruit can be used if desired – just add ice – but I usually use frozen fruit for smoothies to thicken them up and make them super cold!
